Default Left Over Rainbow Trout

So on our second feed of Rainbow trout from the holidays and the wife and kids are getting sick of the same thing. Have a little over 1 pound of cooked rainbow trout done over the BBQ with lemon pepper and butter. Wondering what you guys do with left over trout to change it up. I am thinking of maybe a fish cake or a trout casserole? Any recipes would be great as I do not want to see this go to waste and always looking for something different to do in the event that we actually have some for left overs. Thanks

I would pick up a cheap shrimp ring and make a chowder.

Diced carrots, peas and corn, diced potatoes, cook them up, thicken with flour and milk add the cooked fish and cooked shrimp. A loaf of fresh crusty french bread or baguette and call it good.

Or skip the flour and milk and go with canned stewed tomatos, diced celery and veggies, if you prefer red.
Season to taste of course. I use Frank's Red Hot. I put that ...well you get the idea.

Just mash it up with some mayo, mustard, relish... make a few sannys and go fishin again.

Like both ideas.

Think the chowder might be on the agenda for the next day lunch menu on a weekend.

As for the sandwiches that what I do if I am going the next day but alas I have to work all week and fishy breath does not work well in an office, lol.

I already have about 8 pounds of rainbow in the freezer from last week so will be going for Pike/Perch this weekend to get my other freezer fish stock up.

Keep the ideas coming as I need more as the family loves fish but always trying to mix things up so I have an excuse to go out and get more.

"Honestly honey I am just fishing as I want to try this new recipe for trout/perch/pike. I'm doing this for you."

No I don't, but I could not bring myself to feed fresh fish to a cat or dog as I would just pick away at it until it is gone. I have always found a way to use all the fish I get before it goes bad but just looking for some fresh ideas to mix things up.

Cooked it up on Sunday so have a couple of days to pick away at it or find a new recipe.

Add a little cream cheese, maybe a splash of cream warm it up, whip it up with hand mixer and have a nice little smoked trout spread on crackers.

Add some capers and minced garlic olive oil and toss with some linguini.


If you want croquettes, try this recipe.

3 cups of whole milk
1/2 cup of butter
1/2 cup of minced onion
2/3 cup AP flour
grated nutmeg
salt and pepper
1.5 cups of grated full flavored cheese (Manchego, Mahon, Gruyere, Cheddar)
1/2 cup minced ham (OR USE YOUR TROUT)
2 T chopped fresh parsley

Simmer milk over medium heat don't let boil over. Melt butter, saute onion, then add flour and seasonings. Then add the milk slowly, mixing, then add the cheese one handful at time, blending until melted and then add more. Throw in the ham and parsley. Pour hot mixture into a oiled 9x13 pan cover and cool in the fridge overnight.

The next day, heat 3" of oil to 360 degrees. Cut and roll small log shapes, then dredge them in flour, egg, panko and fry up in small batches. Serve warm with a dipping sauce of your choice or plain...either way they are great.

OK now you have my mouth watering. I was going to use them tonight as a quick supper for the family but think these croquettes might be a great way to use them up.

Keep them coming as these are great.

I think that we should do our own Alberta Outdoorsman Cook Book and raise money for a worthy cause based on what I am seeing here and in the past.

at least with croquettes you can serve them as a side dish.
