Default Cutting salmon steaks??

I have a whole chinook salmon I caught earlier this year. It is frozen and I want to get it cut into steaks.

Does anybody know of places in or around Calgary that have a bandsaw and are willing to do this?

Any help would be appreciated.

Cheers!

From my experience I would go to the meat department at your local grocery store and ask them or a Butcher shop. A good way to cook salmon steaks is to soak them in Italian dressing over night then barbeque them. Hope you get it figured out.

Mustard, before you chop up that salmon, I'd suggest that you smoke it to "candied salmon" instead. If you've never had this before, believe me, you'll never go back. I can post the recipe if you like.

I used to work at a place here in Edmonton Called Billingsgate!
I know that there is one in Calgary as we would do business with that location.
When i worked at the one here in Edmonton we did lots of custom cutting and service for customer's who brought in their catches including frozen salmon on the band saw.

When you are dealing with seafood and special cuts its worth going to a place that specializes in that area rather than going to a local supermarket and having just anybody cut up your catch. IMOP

Here is the Link for the billingsgate website,
http://www.billingsgate.com/seafoodm...locations.html

The Calgary Location Phone # is (403) 269-3474

and their address is

630 7th Ave. SE
Calgary, Alberta
T2G 0J7

Give them a call and see if they can help you out!

Horizon meats in the NE (# 1 3610 29 Street NE) should do it. They process hunter game meats all the time and are a friendly bunch of people.

I agree just did up a batch my self, the recipe I followed was a dry rub that basically consisted of dark brown sugar and salt, with a glaze of honey and maple syrup.
I googled it up.

You don't need a bandsaw to cut a salmon into steaks. I prefer fillets so I rarely cut steaks anyway but it's definitely possible to do it with a sharp knife. Here is a link to a video that should help:

Thanks for the video Hunt & Fish!
I always thought I'd need a bandsaw.

With just two of us at home, I prefer just putting a couple of salmon steaks on the barby - instead of cooking up a whole fillet. I always found it annoying that I couldn't get the fishing lodge to cut salmon into steaks before the trip home from the coast. Now I'll bring them home fresh, cut them into steaks myself, and then freeze them.

If you were planning on thawing the salmon before cutting it then use a serrated knife, kinda like a bread knife.

No prob. I know what you mean about not having to cook a whole fillet for 2 people. I usually cut the fillets up into smalling servings.

I missed the part in the original post about the fish being frozen. A bandsaw is probably the only way to go without thawing it out.

I used my saws-all and it worked really well. I keep a couple blades aside just for this purpose.
