Default smoking a pork shoulder

well a nice big juicy pork shoulder just went on the bbq on low with a pan full of hickory/maple chips...just 5 hours to go....hahahaha

What temperature do you try to keep it at? Or do you just go by instinct?

I tried some ribs that way last year (low heat for about 4 or 5 hours on BBQ with wood chips below) and apparently I did something wrong because they weren't what I was hoping for. Maybe I kept the heat too high.

between 160-180 for the full 5 hours...then wrap in tinfoil and finish for 30 mins either in the oven or on the bbq at 350....then let it sit for 20 mins to rest.

When in photopail right click on the direct link click copy. Then open the mountain icon right click in the blank and paste.
