Default Back Bacon , Egg and Cheese Bun Breakfast Sandwich

My son made his first batch of Back Bacon and Tasso this weekend*( with a little direction)

So breakfast today was some of his back bacon.

Default tried something new tonight, elk jambalaya?

a whole left over BBQ'd round steak from my sons elk this past Sunday. Cubed it for a stew but then went Cajun crazy with kitchen sink of ingredients. just a handfull of 9 bean soup mix, garlic, onions, carrots many of my wifes dehydrated veggies and spices from the garden including more green onion and some vegetable soup stock. Topped up with some water in slow cooker all afternoon then added Italian spices, Mrs dash and black pepper. ( A true Cajun even eats black pepper on their ice cream)

Used the rice cooker to steam a big bowl of rice while the jambalaya was simmering.
Serving the stew like jambalaya mixture in a soup bowl on a large bed of rice. No leftovers anticipated.

Mango salad with Salt and Peppered sqid...this dish just explodes in your mouth with flavor.

That is fantastic.
I worked 7 years with a mostly Chinese kitchen crew and have made Chow Yeow Yee(phonetic sp) many many times.
But have never in my career seen it incorporated with Mango , Salad and Cashews.
Amazing- I am still trying to process it all

Default COLD SNOWWY DAY supper

What is better on a cold day than a chili,,,but this= is turkey chili amazing taste..add a cheese garlic bread and to warm the house up bake a banana bread with chocolate chips......sombody please help me off the couch

The boy turns 22 tomorrow and I have always had the tradition that when it is your birthday I will make anything you want for your birthday dinner. Has been crazy over the years. When he was about 10-all he wanted was bacon. No bread, no sides-just bacon.

This year his request is- Grilled Bacon wrapped Asparagus- Homemade Piri Piri Ravioli with Sweet Potato/ Cream Cheese filling-Chipotle Cream Sauce.
Baked housemade Juniper Camembert with a pear almond topping.

Old Bay Shrimp
Strawberry Rhubarb Pie.

No- I brush it with Olive Oil and black pepper. If marinade has any moisture then the bacon does not crisp as well.

Ordinarily I soak the asparagus in water 1/2 hr and pat dry and then marinade in Balsamic and oil. But not when doing bacon wrap.

No photos but for supper for the last month and probably a few more weeks into June supper is WHATEVER Keg wants to cook. His wife is not able to do kitchen duty - so whoever is near and cooks good grief why in the world have you not sent this poor man some food over ?

He is such a good cook I am re-considering whether or not I should go to work here in Canada and take it in the neck when I get my SS from the States.........his cooking is mighty good.

Red Frog next time you come by Keg will cook supper and you will really like it trust me.

no pics but I took some potatoes cut in half with butter and roasted garlic and pepper spice on then, wrapped in tinfoil and put on the BBQ. Then soaked corn on the cob ( husk still on) in the kitchen sink for 10 minutes. When the potatoes are about 20 minutes from being done I put the corn on the bbq husk and all. 10 minutes later I threw the pork chops on smothered in Butt Rub and the roasted garlic and pepper spice. when one side is done flip it over and apply a thin coat of bbq sauce. When the chops are done take everything off and eat. Dang is that good and the corn is very good steamed in its own husk. I am sitting here all stuffed and falling asleep. lol

I would try plating as well but my wife is a vegetarian and unless we have company most of the stuff from my smoker or grill often only makes a brief stop on my plate after the long wait of the low and slow process.

No pics either but for Father's day spent out at the inlaws with the boys. BBQ Elk steaks, grilled tiger prawns, crab legs baked in the over, bake potato, salad.

All those pics posted made me hungry!! Looks Great, probably tastes even better.

Going to have to try the bacon wrapped asparagus. BAcon wrapped shrimp is good too. Fatherinlaw made some coupl eyears ago and they taste as good or better than scallops.

I hear that! Low and slow makes the stomach juices flow for hours and by the time I get it all finished I rarely remember to take photos and I certainly don't bother plating!

Try them with prosciutto(sp?) and a soft cheese like boursin or chevre.

I bet those elk steaks were amazing! I haven't had elk in awhile.

Stinky made dinner last night.
Supervised to ensure he didn't burn himself

Apple wood smoked salmon, salad
then we made s'mores

It was a quick dinner on a hot charcoal smoker, but gotta say he did a good job.

Fridge cleaner today- decided to combine all the partial Creamy style Salad dressings taking up space in the fridge into one combined dressing to pour over a bag of Rainbow slaw. Also found a partial jar of Capers so added that to the mix complete with caper juice
So
Three Peppercorn & Asiago , Buttermilk Ranch , Caesar and Three Cheese Ranch, Capered Coleslaw

Then I grabbed the rotary grater and used up all of the small hard cheeses from my cheese cave. About 6 different varieties, Red Leicester, Manchego, etc
all tossed over top the coleslaw
Now I am going to grind some meat trim and make some Pepper Cheese Smokie Burgers to toss on the Q next to some Barley Rosemary and Feta stuffed Peppers.
And all of that because I got sidetracked while trying to make room for beer in the fridge
