They do not taste as bad as you would think though they are full of bones. Not worth your time unless you're a fish soup kind of guy or don't mind picking through a couple sets of Y-bones.

Default I’ve tried them.

I have eaten them. Make sure you trim off all of the dark flesh and only have the white meat.
By the time you trim the fillets up properly your not left with much fish but they are edible.
Smoking them might be the best option like goldeye.

At the same time most Canadians go crazy for the same cultures cuisine and more. Go figure.

They taste good to me. The issue, as was already said, are the bones but I eat most of the small ones.

Next time I catch them I'll try to pressure cook them for 3 hours to see if the bones softens like with the canned fish.

The link below shows an Asian carp that is fileted and then prepared for the table. Something to consider if you have access to some Carp near by.

Used to eat them frequently back in Europe - mostly smoked. But here I'd rather smoke whitefish than prussian carp.. beats it by mile.

I ate them. Very simple.... clean them up, use the salt only or add a little bit pepper for couple of hours, and them deep fry them until the color change to gold. usually the bone will be crispy at the time. basically you can eat everything at this stage. try it! maybe you would love it

they are already in every body of water around here I wonder if a pike canning recipe would work to take care of the bones. burying them in the garden is a great way to attract foxes and cats for a nature experience

They are eaten in other countries so probably the best bet is to research how they prepare them. Odds are you will get the best results referencing the cultures with the most experience cooking them

I am not a big fish eater so I am not going to bother eating carp myself. Now if we were allowed to use them as dead bait that would be beneficial too
