AA beef doesn't sell for the same price as AAA. That accounts for some pricing differential.
Some tougher/cheap cuts are more flavorable - especially if you can find a cut with a bone.

Honestly, this wouldn't bother me. I frequently age my meet in the fridge for another 5 days to a week. It was already 21 days aged. But generally it was in a marinade. Teriyaki or Korean BBQ sauce, and powder over good with salt, pepper, and garlic powder.

They (and definitely other stores) often/always have worse looking meat on the shelves at full price, so not sure what the expiry date really indicates, lol. Not a brown spot it and looks like they were packed yesterday. The almost half-roast size of a steak I posted on the previous page was some good eating (simply salted and pan fried, which wasn’t easy for the size of it, lol):

How do you age it? Just keep it in the fridge in a store bought package?

Generally age it in a marinade in a container. I will vac seal it and toss it in the fridge too.
I haven't bought beef in 'store' packages in years.
