Default The Sausage Haus in my Neighbourhood



It's that time of year.
A true labour of love.

So far it's been:
45 lbs. of Summer Sausage
15 lbs. of Maple Breakfast (not shown)
8 lbs. Pepperoni Snack Sticks
8 lbs. Hunters Blend Snack Sticks
15 lbs. Pressed Jerky.




Snack Sticks are gonna hit the smokers as soon as my first coffee is finished.

Then a buddy is bringing a Masterbuilt smoker by for the jerky.

Still gotta press out some Hot Italian, and more Breakfast links.

Stay tuned.

Like. Looks good.

Those long ones are pressed burger that you mix up, then push out of the gun? I buy those from Viking Meats when I'm in the are and have wanted to make my own.

That looks great, it always has a better flavor if you make it.lol


BUT that's 2 bottles of "WATER'' on the table...... mix?

Paper weights, so the butcher paper wasn't rolling up while we pressed out the jerky.

Buddy brought over his Bradley original, as well as his propane fired vault style.

We finished all the smoking of the jerky and the snack sticks, pressed out another 10 lbs. of maple breakfast, along with 25 lbs. of hot Italian sausage.

My low back and feet hurt, but the pride in turning out ones own table fare makes the aches and pains seem pretty minor right now.

I’m curious does that silver board help insulate the Bradley much? I find that is one problem is heat retention.

Silverboard, SM, foil bubble, it all helps.
-25C and the box will get to 225F in about 30 mins.

Just don't insulate the back below 10" from the top.

Glass bottles can fall and break.

Empty beer cans were too light, and full cans would start to warm up.
