My grinder hadn’t been used for years either. Plates also had some rust. Cleaned them up with a wire wheel. Washed in dishwasher and as said oiled for storage. For burger I use a medium plate. I add 25% pure beef fat to the burger. Give it a try. I like it way better than pork.
