Default My version of Bigos: Polish Hunter's Stew

All that talk about Heritage Days, and events in Eastern Europe got me to cooking.

I actually have KGB popping by to pick something up and I wanted to gift him with a snack.

I made up my own version of Bigos. Hunter's Stew in eastern Europe only has rules of cabbage (often sauerkraut), meat, sausage if you have, and something sweet like dates or prunes.

Sour
Salty
Sweet

All over creamy Yukon Gold mashed potatoes with lots of butter, cream, and lots of fresh dill from the garden.

This is honestly a superior comfort food. Normally, I use pork and game and garlic sausage, but honestly this was just as good.

If you ordered it at a bistro in Krakow or Lviv, you would feel you got your money’s worth.

but what is that Corona thing???

And what he said about the sweet.

"Rinse the Kraut" Interesting... I will try that the next time I make smoked pig's feet and sauerkraut.

Rinse the Kraut

I like the sweet and I like the sour. That’s my family’s recipe. We squeeze the kraut. Never rinse. Your family’s recipe may differ. I would not like the beans or the bread.

That thing was delicious! When I brought it home I had to go down to the basement to the freezer for about 5 minutes, when I came back my wife was ear deep into the bowl…. I had only a few licks left but they were delicious! Wife liked it very much! The combination of the flavours was awesome. Never had dates in a meat and potatoes dish…
Thanks again for the treat!

Default great stuff

I love Bigos but my wife does not like the sweetness. Because of this I dont make it very often. I use homemade sauerkraut. Maybe I should try it without the prunes. BEL

Default paprika paste

I brought back some paprika paste from Hungary last year and it is a game changer for goulash, bigos and any stew or sauce. Recently I purchased a Turkish paprika paste from Amazon once I ran out of the Hungarian version. BEL
