Default pickling and canning

well it's that time of year again
what is everybody pickling or canning ?
I'm doing dill and bread and butter pickles some beets
yellow beans
going to make some salsa
my garden turned out real good
going to try pickle zucchini to this year
then some hot sauce with my Trinidad scorpion peppers

planning to can tomatoes, salsa, zucchini relish and who knows what else...

I made a jar of pickled Enoki mushrooms (had some left over and didn't want to through them out), they are quite good with a smokey on a bun.

Mostly jams and syrups. Not sure that qualifies as pickling. Got a big pot of chokecherries on the stove as I type.

We always do beets, dill pickles and carrots. And if we get adventurous we will can some potatoes. Also make jams and relish and salsa.

Have canned potatoes and tomatoes so far and pickled Jalepeno's. Gonna have lots more tomatoes and looking at pickling some carrots and beans as well. Also done some freezer jam made with wild strawberries and picked 24lbs of huckleberries mmmmm. Love harvest season!

Did 24 quarts of my salsa (I really like salsa)...did some million dollar relish (Jean Pare recipe with a slight twist) and the best damn bread and butter pickles I have tasted! Still looking to do some dill pickles yet...

And some Saskatoon jam.

I will be making my yearly gallon of cucumber and onion fridge pickles. I would like to make some hot mix pickles this year too. Would like to find some good crabapples and can a few quarts. I just freeze my berries.

Will be helping my elderly mother make her 10 gallon crock of sauerkraut too.

30 jars of baby dill pickles on the shelf and 12 freezer bags of raspberry's in the freezer with more to come .

The wife just finished up 36 jars of Evans cherries in rum and a a mess of Raspberries and Saskatoons.

The wifey took some holidays and started yesterday....

Strawberry, raspberry jam...
Peaches....2 cs....Just waiting for them to ripen a little....Kids love the peaches

We are learning every year....Spoiled most of our peaches last year cause we reused the rubber rings from the year before....Yup...use one time and garbage....LOL

Glad I'm retired! We've been in full swing to fill the "bomb shelter" in the basement. Pickled cukes, beets (red and yellow) carrots. For berries strawberries, haskaps, evans cherries, raspberries both yellow and red, jostaberries.

Hopefully next year the honeycrisp apple trees will bear some fruit. We are looking at getting a few of the new haskap variety produced by the U of S. They are called Blizzard and the berries are twice as big as the tundra or indigo.

Just took off 120 lbs. of some of the nicest looking and tasting clover/wildflower honey.

Might have to expand the bomb shelter if this keeps up.

We planted our first garden this year and first mistakes...Oh boy...

The wife and I are having a blast trying everything out this year...

Pulled a great crop of red taters out already....and they are delicious..LOL

I've never tried pickling or canning, but the Scotsman in me is wondering if I can pickle some cukes in the leftover pickle juice from a favorite variety that I buy? Too much risk? I'm thinking along the lines of boiling it to sterility and blanching the cucumbers before adding. And no, I've not yet researched this at all so flame away

20 quarts of Rasberries frozen. 15 of cukes and 10 of Bread and butter. Half of the dill is frozen also. Will wait another month to do beets and horseradish. Lots of of other stuff to come in the fall the greenhouses are brimming full.

Going to do spicy pickled beans , pickled carrots , regular and spicy and gonna try spicy pikled cauliflower this yr as well. Salsa will come later as the tomatoes ripen

If it were me I'd be most worried about the acidity level. Some acidity would have been diluted by the original low acidity pickles in the mix. A cuc is nothing but water. You could use a pH meter and use some added vinegar to bring it back up to what should be a standard starting pH. Then go with the normal pickling process. But I think I'd be inclined to just start from scratch and find my own magic recipe. Or call the company and see if they'll give a few hints. Safe end pH is under 4.6 (but factoring in ingredient dilution) otherwise ya gotta pressure can to ensure botulism is kept at bay.

Got totally hooked on this last fall...pickle/can all year round depending on what is available..asparagus, radishes, white onions, green beans, carrots, beets (yellow and red) and SPECIAL for my 86 yr old Dad..pickled wieners that I got from this site...Can't remember the poster's name BUT that wiener recipe is GOLD and full of HEAT !!

Cannot find pickling salt in Edmonton. Went to Savon Superstore and Walmart without any luck.

Going to check Sobeys and co- op in the morning.

Are there alternatives?
