As soon as I get home tonight I'll check the brand that we use. Any Lebanese Pita Bakery should carry some high quality Tahini. I'll let you know for sure which one tonight.
I'm in Edmonton so I can't tell you where a good bakery in Calgary would be, sorry.
Good timing! I just spoke to the boss and here's what she said:
1 Can of Garbanzo (Chick Peas)
Tahini
Extra Virgin Olive Oil
Lemon Juice (Bottled or Fresh)
Empty the can of garbanzo beans into your food processor and save the water in the can. As you process the beans, slowly add some water until the beans begin to look like hummus consistency (no more chunks and beginning to look like a paste). Then add 1 1/2 tablespoon of Tahini, 3/4 tablespoon of olive oil. At this point, add lemon juice to the processor to taste. Feel free to open the processor and taste how it's coming along and make adjustments as you see fit.
Normally when the hummus is done and we put it in a plate, we top it off with a light splash of olive oil and garnish with some olives or pickles.
