When Keg gets home from making the roads safe again.............
It's moose liver tonight w/fried onions, mac and cheese and some veggies - not cooked yet and probably a glass of milk or juice for the man unless it is a tea night. I get water. Wish he would get home I am hungry and been eating bits and pieces of them leftovers to keep my stomach from gnawing on my backbone......

Tonights Meal step one
Our menu Tonight for our great friends is Double stuffed potatoes, Lobster and grilled to perfection t-bone , to start with the Potatoes, I make everything thru out the day,
to start one pound of bacon and a half of a onion put in at the last 2 min of cooking, like to keep bacon just on the under side of crispness for extra flavor
next microwave potatoes 12 min ,cool and dish out potato try not to cut skin in bowl mash potatoes only add a little butter , milk and come to a good consistence ( ) add bacon onion , 1 cup grated cheese and 250ml of creek yogurt. mix throughly with mixer. Spoon onto shells add cracked pepper to top and a little more cheese.. wrap set outside, to keep cool ....place dog in the garage!~!!!!!!!
Now lets work on Lobster we only due Tails ..so lets cut them down the center to the last horizontal shell spread open and carefully pull out meat and place on top ,,,,,wash off good and take out the shxx vein.add
One of the most important things to do is put a beer in the bottom of pan cause this is what will steam the lobster. Add some garlic and a little seasoning salt..................will be back with stage two the meat,,,must be 12 somewhere I am thirsty,,,will cover and cook on BBQ for about 10 min when its time

Grilled Beef Roulades with Asparagus and Laughing Cow Cream Cheese
Started with a chunk of Eye of Round
Cut 60Gram slices
Slit one side of a cryovac bag and pounded the meat to a uniform thickness
Pounded the rest
Seasoned the meat surface ( wide side toward me)and placed 1/2 wedge of Laughing Cow and 2 blanched asparagus tips on each
Proceeded with the rest
Rolled the roulades and placed on plate
Preheating BBQ NOW!!!!!!!!

Skewered the Roulades in groups of 4. This makes it easy to turn on the grill. I use the same technique for Rouladen when pan frying so I do not have to use toothpicks to close each roll.
On the hot grill
And then sliced for service
Nothing left to do now, but wait for the sweet sweet aroma of Asparagus pee to waft up at me in the morning

Omega50......those roulades are neat...especially skewering four at a time. Great trick/tip. Let's you grill one side and flip with no troubles or a box of tooth picks. Going to use that trick for my bacon wrapped deer tenderloins aka filet mignon. Those roulades look pretty tasty.
Threeforthree: the restuffed potatoes are one of my fave...nice.....and with lobster tails.....boy oh boy....that's a feast for a king.

seared a pork roast on the BBQ and finished it in the oven with roasted beets.
Tomorrow we are having spagetti.
Might even make meatballs.

Supper tonight was Tuscan potato salad ( no mayo) with redwine vignigarette n roasted red peppers. With pan seared halibut steaks, topped with lemon caper garlic butter.
In between I made three big pans of moose hamburger lasagna with five cheeses, ricotta, old fort, aged white cheddar, mozzarella, and of course Parmesan. Two are for the freezer. Tommorow one will be with French bread garlic bread baked with chives, organic garlic n cultured butter.
