I have eaten meat from a few wild boars, and I highly suggest that if it's meat that you are after, shoot a smaller pig, rather than an old boar.

I shot a wild one in the Vermillion area about five years ago and a couple from Wayne Witzaneys place in Goodsoil. I enjoyed the meat but like most wild game, there is a bit of an after taste.

I have in Key West Florida. My tarpon/shark fishing buddy shot one there. We got drunk, deforsted it smelled up his condo, ate two chews and threw it away and kept on drinking.
Probable better off to shoot one that was feeding on grain! hehe

I have eaten wild boar many times. Just don't make sausage, smoked bacon out of them. Make sure they are fully cooked, so possible bacteria and parasites will be destroyed. Trichinella can be a killer. Bears can be infected with it also.

Farm raised wild pig is amazing. Butcher them at 100 lbs or so and you won't eat a domestic pig again, bigger than that......well...........

I did last night and this morning. I raise some for our own use mostly. I sell a few. They are fantastic eating! But mine are grain fed also.

Pretty good
My favourite wild meat is moose then elk, with deer and wild boar tied for third.
I shot a few pigs at Wayne's in goodsoil as well. Worked with his son Scott for 4 years. Was a blast hunting and the meat was good. Processed some into garlic ring some more into breakfast sausage and left some roasts and chops.
I would honestly rate it right around deer . I'm sure a lite piggy would be down right delicious.

I shot a good sized wild boar (250-300lbs) a few years back...it was OK but stinky while being cooked....had to open the windows, the bacon and hams were ok but again it was musky.
Shoot smaller bodied females if you want to eat it.

feral pig taste like regular pig, more or less, I guess.
if you're asking about European boar:
wrt to taste, it varies, mature males taste like ****.
sows taste better, the younger, the better.
wrt desease - pigs (like bears) can carry trichinellosis http://www.cdc.gov/parasites/trichinellosis/
risk varies from place to place, meat can be tested (if you find a place to do it)

wild boar meat
I've eaten wild boar (dzik) in Poland many times.
It tastes very good but not like pork and doesn't have that gamey taste like deer. Good quality meat neither tough nor chewy.

Friend of mine bought a couple sows a few years ago before he retired and was just going to fatten them up,. To his surprise they were both pregnant and he soon had lots of them. so I was buying one every year for a while but they are just too expensive for the amount you get but my late father loved them.

My neighbors recently gave me a quarter of deer and a a few "rolls" of boar made into pepperoni. Was it edible? Yes however very very gamey. Fresh boar would likely taste better.

I have many times, normally ok as long as not a big boar,
We used to raise a few pigs on the old mans farm, porkers were killed at 50-60 lbs and baconers at 70 lbs aprox.
When I ran a dog pack, we never carried out any really big aminals about 120 lbs and under, if I had a request for a pig for meat,
The other thing is to concider what they may be eating, if feeding on a rack old carcass, for days, that smell can get into the meat.
