Default Walleye De-Boning Video

Decided to try my hand at making a quick video on how I like to de-bone my walleye fillets.
I find this method not only the simplest but the quickest and cleanest for getting the highest yield of meat off the rib bones which is often just discarded.

Cheers,
Mike

I haven't tried that with a walleye but it is the same technique I have started to use while in Florida. It does take a few tries to get good/fast at it but it is a lot easier on knives(never cutting through bones, which is very important on a fish like a red drum that I have been catching).

I might actually have to try this method with walleye, I usually just cut the sides off then take ribs and pin bones out but this other way might be a little easier then what I had been doing. I can't use your method since it requires removing the best part(the skin).
