Valentines Supper
We like to stay home that night and she can have a glass or two of wine and I can get the meal ready, took the Pork tenderloin out in the morning to get to room temp about 1 PM start to sprinkle Kosher salt, about 1 hr before cook time a heavy rub down with Montreal steak spice, and then on to the Grill placed on a rack so more of convection cooking , after first turn start brushing on HOISIN sauce, cook time 35 Min at 350, meat that knocks your socks off, off course a couple lobster will not hurt the meal!!!
Then her Favorite dipped strawberries

Feeling like a hearty dinner in this cold.
Rosemary Roast Turkey Breast- B&R Dijon Sage Turkey Thighs- Rolled Dressing. Pan Gravy
Creamy Amaretto Pecan Broccoli Slaw
Morel Dust Swartzies
Steamed Asparagus and a scratch made Lemon Meringue in the works.
Dinner at 5pm.
In the mean time- a wee dram of Scotch-or two!

Made jalepeno duck poppers last night. Fill a sliced jalepeno with cream cheese. Wrap in a mallard breast sprinkled liberally with cajun seasoning and then wrap in bacon.
Too bad couldn't go on the grill at -42.. still come out great in the pan!

Yum 
I love cabbage rolls but I do not like the fuss of rolling them. Maybe I am just lazy. I use the same ingredients and put between layers of shredded cabbage and bake in a casserole dish.
This time of year I use ground elk. My dish does not look as good as rolled, but the taste is all there

Got some goose breasts simmering in duckfat for the last six hours, (Goose Confit). So Ill broil up some white beets and sweet p'taters with olive oil and rosemary. Asparagus with lemon pepper on the side. last 20 min's the goose will be under the broiler. To me this is the only way to cook whole meat goose where it is not having to be done medium rare, and it ends up so you can cut it with your fork.

Grilled Beef Asparagus Roulades
That time of year again.
Pounded out some beef.
S&P
A half wedge of La Vache Qui Rit(Laughing Cow)
Some blanched Asparagus
Roll tightly
Grilled on the BBQ with Truffled Sea Salt

2 skewers through each to prevent unrolling and facilitate flipping in the BBQ as a unit instead of chasing individual roulades.
