Default Pork shoulder/ fat for sausage calgary area

Where are you guys getting the pork shoulders and fat for making sausage ? Preferebly in the calgary area . I saw a post somewhere in the buy and sell but saddly can not find it anymore .

My family buys the half loins from No Frills, last week they were on sale for $1.77/lb. It makes for nice lean sausage or burger and the extra can be cut into chops or a small roast.

Red deer lake meats 5lbs of fat for 12$
They are 5min south of 22x and 37st sw

Second vote for Trimming Fresh Meats off Centre, great prices & service & they’ll grind it however you want. I also use their pork shoulders in the pellet grill for pulled pork.

I called now that they are open, $1.49lbs for back fat, so straight fat, no meat on it.

That is a WAY better deal than paying $1,50 for straight fat. Means you get meat as well as the fat for your sausage. Will check that out here in the Edm No Frills.

Grabbed some a couple days ago. They do have a limit of 4 though, may have to go in a couple times.

We used to give away lots of fat for guys grinding venison but now there's so many folks making sausage it gets sold. Another factor is that much of the pork comes into the stores block ready so there's very little extra fat on it to trim off.

It's all supply & demand.

Although it was more than expected, I bought 6.5lbs of beef trimming (~50% fat) from Hirsche Meats in Okotoks @ $9.95/kg. I bought it for both the fat content to mix with burger, and will use the rest to grind-up with dog kibble for our Doberman. We have him on a partial-raw diet.

* SIDE-NOTE, the butcher I dealt with said he would be interested in processing wild-game outside of work-hours (and not at the business), for those that don't do it themselves. His name is Noe (pronounced "Joey", but with an "N").

We do the exact same thing. We cut chops and a roast out of the loin and all fat and some meat ends up our mix for home made sausage. I can get 12-15 chops and a roast and a couple lbs of trimmings from one big pork loin. If a guy/gal can use a knife then they can save a lot of money.

Worked 2 weeks ago at the okatokes Costco. It was also cheaper than red deer lake meats.

They told me they had quit selling caselots but when I went and asked the meat manager they got it for me. Obviously not all on the same page. Was $7 a kg American pork, I was quoted $4/kg for Canadian pork shoulder from capital meats will definitely be trying them next.

Only problem with buying pork shoulder vs is fat is you end up with so much meat in the freezers lol

I prefer the case lots as I seem to be able to use it up pretty quick. Any of my fresh fry sausage I make using red meat is mixed 50/50 ish, give or take. Picnics also make good pulled pork, hams, and awesome stew meat

I recently went into the Real canadian wholesale on the west side of Red Deer . I had bought pork shoulders there in the past for mixing with Sausage.
I was grinding up some caribou trim for burger and needed some fat content in it.
They never had any pork shoulders but they did have a Bulk box of bacon. I put it on the scale at home. It was 13lbs. I ground it with the 35 lbs of meat i had . Turned out excellent . The Bulk bacon was only $40 to.

Pork shoulders are great. Cut out the capicola and braise it in mushroom sauce.
Trim any part of the shoulder well and make souvlaki (marinate overnight in lemon pepper, rosemary and oregano). The rest you can grind.

I get mine in trochu at sunterra. 40 lb boxes. 15%. $35 a box if I remember right.

Download the app FLIPP. It's an APP that searches all your area store flyers' and provides the currents/weekly deals/sales. You can often find pork, hams, and bacon on sale for $2-3/lbs. Same or less $ than the butchers but often adds a nice flavor.

Wholesale club sometimes has bacon packs on for 2.50 for 500g. That’s cheaper than a lot of places are selling pure pork fat trimmings. Plus it makes the hamburger taste pretty good....bacon burger....hmmm

Trimming on centre , definatly will be going back there got 30 lbs of pork shoulder and 5 lbs of back fat they ground it up fine right infront of me . Alsongave me the skin if i wanted to try and make some craklin . Any recipies ?
