Default Getting ready to smoke !



30 lbs of Sockeye and 40 duck breasts getting dried, Duck is going into dehydrator for jerky. Soon as it dries out and starts cooking off the the lake with the dog to see if any birds are flying.

It took all my dogs self control to sit beside the smoker !!

Soy, honey, salt, brown sugar is about all. Brined for about 14 hrs. Dry for 2 hrs then smoke on lowest temp I can about 120 for 1.5hrs then up it slowly over the next 5-6 until it looks good. I also baste it with soy, honey, sugar mix every hour until done. Turns out moist and some of the best I have ever tasted.

That is basically how i do mine but I dont baste the fish, and I will from now on tho. Thanks for the tip

I did about 6 lbs of jerky on Saturday morning, set it on the counter to cool and then went outside to check on the grandson, came back in and the dog polished off the whole works.

Don't have to tell me three times.

Turned out ok, got called into work half way through and left the wife in charge, I forgot to tell her to baste it but still tastes damn good !
