Ooh, love the thread! I've loved making bread since I started as a teen. Currently into whole grain spelt, red wheat, and similar.

Will try to take some pics next time.

Anybody who has a starter can give you some. Where in Calgary? We might be able to meet sometime.

So many variables mean every starter will be different in flavour. I am sure that my extensive cheesemaking and sausage curing activities in the home will introduce unique bacteria into my starter. As of yet undetermined.

I heard some people run into problems when they are fermenting other things nearby. Like kefir in the same fridge etc.

I find all this very interesting and I do enjoy baking. My issue is that my kids are gone and I live alone. Have you guys tried this "Dried" storage method for the starter? https://www.theperfectloaf.com/store-sourdough-starter/

Its hard baking when you have no one to feed. LOLOLOL

I haven’t but sourdough lasts longer than yeast bread and it freezes super well. I can also give you a recipe for a mini loaf I am baking. That would be a one person / one loaf per week kind of thing.

Note to self. Don't let your Starter enjoy the conditions inside your oven overnight.

There is a chance you might forget that it was in there and pre-heat your oven to 425F and only remember once your oven chimes to let you know it is up to temperature.

Back to the drawing board.

Maybe that's enough sourdough for this year

Nooooooo! By the way for the next try... the counter is fine. Even a cold kitchen like ours (~16 C) works. It just takes longer to get a starter going.

Actually this might be a good place to ask. I was looking for some local mills (say between Calgary and Red Deer?) without luck.

Does anybody know of a place?

I know there is one in Strathmore, High River and Vulcan but I am never down there.
I found one in SK that ships and I ordered a bunch of whole grains and Einkorn flour to try. I might go that route if I can't find anything closer. They had the best customer service and I got some extra goodies in the package as well.

I tried the whole rye and sprouted it, ran it through the Kitchenaid meat grinder and added the pulp to the bread. It was a fantastic loaf. Rye flour tends to really sour which we love but this was almost sweet. We love the sour but I was really intrigued by the sweet sprouted grains. A very light and moist loaf.

There is so much to explore in the world of breads and grains. I have also been baking a bunch with yeast just to learn and try out long fermentation (poolish, biga etc.) with commercial yeasts. I can see buying bread in the supermarket anytime soon.

I am still baking every weekend. It’s a fantastic therapeutic hobby 😂
For you serious bakers who are after steam in the oven... I discovered something that is a $25 game changer. Canadian Tire has this massive rectangular turkey roaster. PERFECT vessel to bake a ton of bread in! I do 2x 600g loaves or up to four minis (300g) or a bunch of buns and the oven spring is great. I use parchment paper so clean up is zero.
No need for a $200 Dutch oven.

Sourdough Pizza. Last night I made the most outrageously tasty pizza. I developed the recipe myself based on a yeast recipe and my go to sourdough bread recipe and practiced a few times. Totally hit the sweet spot yesterday. Pizza heaven!

Absolutely. I can't even tell you how happy I am that I am baking bread every week. My bread is far better than anything in store and now with people buying everything up and me working from home I have no concerns. I don't even have to leave my house.
When everybody started buying TP I stocked up on flour.

Default Whole-wheat / Rye Sourdoughs

I've been baking up a storm ever since the news of the impending apocalypse...here's a whole-wheat / rye sourdough I made yesterday.

Goes particularly well with my homemade Saskatoon berry jam.

Looks amazing! I love my breads. I am working from home right now and sourdough and yeast doughs work great because they only need a few minutes of work here and there.
We are dipping into our jam stash as well. Very comforting breakfast.

Planet organic used to sell 2 kinds of dry sourdough starter. I think they were $15 a pack. I passed but if someone is serious that $ isn’t too bad for something that will last forever.

Wow! $15? That sounds a lot. What's the difference between the two?

Sounds like I need to get a mill!--but have mostly been using freshly ground stuff from highwood crossing, which is the same flour that Sidewalk Citizen and some other awesome bakeries use in town...
