I carried a 7mmstw on my sheep hunts, and on some elk hunts in grizzly country, and I wasn't the least bit worried about grizzlies.

I can never wrap my head around the bear and the gun thing.
I carry a bow in archery season in big time grizzly country and I'm not worried....I think about it a little but I'm not worried. If it worries people too much then they should road hunt or stay home. The gun isn't likely going to save them.
My vote is 6.5 PRC.
Carry on...

Watch it a bit because they are one of my favorite animals assess what it’s doing then decide if I stay put and let it move on or if I slowly move along myself. Pretty much the same thing I have done more times than I can count
It’s a grizzly not a hand grenade without a pin.
Brains and being aware my friend that is how you deal with a grizzly encounter. If you don’t have that part in check it doesn’t matter what caliber you are carrying

Are grizzlies built differently today than they were? I will admit that my first hand experience shooting charging grizzlies is limited to one, but that is more than most hunters have shot, and I would not have shot that one if I wasn't hunting grizzly. I have encountered several grizzlies, and avoided being in a situation where I had to shoot one in self defense.
As for the last time I hunted big game, it has been two years . I don't spend a month hunting big game every year like I used to, but I still get out when I draw tags, or to take out new hunters.

Yes true.
If I was worried I'd stay home.
Probably 20 years ago I would have been worried. I find now that I don't worry about things that I can't control. Maybe your not old enough to understand that yet.

The gears between your ears is the best bear defence and the little goat/deer cartridge can back you up too.
Or did all the goat hunters from days gone by end up bear poop?

I have used a few, and used the 257 Weatherby exclusively for quite a while. That would be my choice.
I made a shift in streamlining calibers, and sold it, but it is one I should have kept.

No , the old goat hunters used a minimum of a .30 caliber projectile , and it had to leave the barrel at at least 3100 fps..
That was the only way they could guarantee survival from a point blank ambush from the big bad bear.

and here I thought the old 270 was a goat getter.

6.5 CM in Sig Sauer Cross.
Good caliber, compact, lightish (6.8 lbs), reasonably affordable, easily modified if that's your thing, uses a mag, not many downsides that I can see.

Had to chuckle yesterday, ran across a vid with Ron Spomer interviewing Phil Shoemaker about his adventures, and his 9mm handgun brown bear shoot, he used a hardcast cast bullet at maybe 20ft, broadside shot, found one under the hide on the other side, rest in the heart lung area, used 7 shots. Don't need big power, just a decent bullet, and the nerves in that situation, to be able to hit it where it counts.

Ive narrowed it down to a MKV hunter xk7 in 257bee or a vangaurd talon in 6.5PRC
Been hitting videos and reviews hard and both are awesome for my needs.
I plan on reloading in next 2 years. Going for a course at P&d
Flat hard hitting 257bee.. for the sake of the romance of it and compliment my 300bee nicely as a go to deer gun. As i hunt alot of open canola fields for mulies and whitetails. . Ammo is not always readily available as most.. but when find one it likes stock up for big $$. Prob wouldnt shoot as much to extend barrel life
And... 6.5PRC. Amazing on game reviews. Ammo readily available at half the cost if not more depending, which results in more range time .. more practice.
Both can, effectively take a moose or elk with proper shot placement, proper bullet selection, and keep within a range with effective energy. I dont like to shoot either unless i have minimum 1700 ft lb energy at time of impact. . Just my preference
I oddly had a moment where i found a Talon in 3006, and thought that was what i needed. Lol.

Let me be the voice of unreasonableness
Weatherby backcountry TI in 6.5 rpm or 338rpm
Short action
More than enough juice to cover all the things you hunt
Not horrible overbore
Different than most
Super light
In a Mark5 of course
My 2cents

I get the action that I want, the barrel contour, length and rate of twist that I want, the exact stock pattern/fill that I want, the trigger that I want, and the metal stock finish that I want.

I have multiple choices to pick from personally. Last season I picked up a 6.5 PRC. i've been very busy and haven't finished developing a load for it but i was very impressed with it. So impressed, I bought another one that I am going to build up a little different.
I have only shot the CM and the PRC for cartridges on your list, but I know where I just spent my money with everything else.

My 2 cents..
I have owned 257 WBY in both a Vanguard and Mark V. I much prefer the Mark V action, although both rifles were accurate.
I know of guys who use the 257 WBY to take elk and moose, and a 100gr TTSX seems to be the overwhelming favourite bullet choice. I ultimately moved away from the 257 WBY and went to the 6.5 WBY RPM... which I couldn't get advertised velocities out of.
I recently had the chance to shoot a 6.5 PRC and it was quite nice. I found the recoil to be around the same as the 257 WBY, and looking at the ballistics you are going to be getting comparable velocities.
My vote goes to the 6.5 PRC in a Mark V. I would be looking at this if I didn't already own a dedicated sheep/deer rifle in .280AI

Nothing wrong with using your 300 mag for sheep hunting, unless its very heavy .If your not planning on buying a super light mountain rifle I myself would just stick to the 300 . unless it weights around 12 lbs which is kind of heavy at the end of the day . I hunted sheep with my 7 mag stainless with the longer barrel . It was not the weight that got me but that longer barrel. To this day I still want to cut that barrel down .Its always getting hung up while ducking under a branch breaking threw the tree line .
