White Sturgeon Meat

I was listening to 630ched today and they where interviewing Ryan O’Flynn who had just won "Gold Medal Plates championship" His winning plate was made with farmed white sturgeon.

Lol white sturgeon in Saskatchewan thats a miracle lol

Retention was legal when I lived in B.C. in the early 70's. IIRC they had to be a meter or maybe a yard long.

Any I ate were very good.

it was legal here too at one time, had to get the sticker for your harvest of one over 36 inches. not sure when it became zero retention.

I had a chance to meet the company owner of Northern Divine, great guy. Could you imagine starting a white sturgeon farm, and waiting 15+ years for these fish to mature before you could start selling your product?? I tried the caviar and it is an interestingly delicious treat.

Another excellent Canadian sturgeon farming business is Acadian Sturgeonhttp://www.acadian-sturgeon.com/en out east. They even sell their smoked atlantic sturgeon online through Costco. http://www.costco.ca/seafood.html

You would think I own stock in "sturgeon farming" how I'm going on, but I actually just think these sort of businesses do a good service to the natural fisheries by creating a legitimate and sustainable market for in-demand products.

Was legal to retain Lake Sturgeon in Ontario until 2008. Pretty sure that's the last jurisdiction in Canada to close wild sturgeon retention.

They commercial fish them out of the St Lawrence in Quebec.

Yeppers, also angling. That's were we used to catch them, then have them smoked. Talk about delicious, almost candy like!
