Real sinew availability?

Hello fellow archers. I'm about to begin construction on a sinew backed osage bow for a customer. I have some sinew but not a lot. Having built a few sinew backed bows I know and expect that I will need more than I have on hand. Do any of y'all know where a guy could get his hands on some leg or back strap sinew? Not picky about what animal it comes from. I've used emu, elk, moose, deer and cow sinew with very similar results. Thanks folks!

I would think any small meat processing shops would have access. It is where I would start at least.
