Default Fish smoking recipe

Only 3 1/2 weeks till the annual 'BOYS GONE FISHN' trip to north central Sask and I was wondering if any of you fishermen and women had a good recipe for smoking Pike and or Lake Trout. I built a nice smoker up at the cabin a few years ago and I would like to try out some new brine mixes.

Rub soya sauce on fillet, then rub in brown sugar to lightly coat, then pepper, lemon pepper, lots of salt, garlic powder then finally all spice. Smoke with willow. Yum. Usually a white fish recipe but good for lake trout too. I haven't kept a pike in 10 years, so not sure how that would be.

2 litres apple juice
3/4 cup pickling salt
1/4 cup brown sugar

Soak for 8 hours. Wash fillets in fresh water and put in smoker.

I smoke for 3-4 hours at 120- 140 with apple juice in smokers water pan then turn up to 180 and baste often with glaze.

Glaze
1/2 cup of apple juice
1 tablespoon brown sugar
1 teaspoon honey

Cook glaze in small saucepan on stove top until it begins to boil then immediately remove and brush over fillets. I leave the pan in the smoker so sauce doesn't cool and harden.

Serve cold with beer.
