I bought the Outdoor Edge DVD's that teach butchering and sausage making, excelent videos. I have been doing my own animals ever since and has saved tons of $$$$$$$$$$$, and found it to be very rewarding.

Last time I asked a butcher to grind my meat, he said sure for 1.20 a lb. Ya Right!

The only think I do not have is a cold storage facility to hang and age animals, does anyone have any ideas on how to set one up are purchase one?

Butchers who also run a meat counter are not to be trusted...period.
Bring them a prime animal and chances are you are gonna be either meat short and/or get lower quality altogether.

In GP, H & M Meats. Its been years since we had to take there but they got our meat in and that was the main thing. When we picked up our 2 moose, there were so many boxes.....we then knew the butcher we had used for years was short changing us on our meat. We butcher and do it all ourselves now for at least 12-14 years now.

They don't sell wild meat.
Bring him a prime beef or bison for a change

I know they don't sell wild meat (kind of illegal isn't it?? ).... I assumed the guy needed to get his animal (wild game) into a butcher to be processed.

So then why would a butcher short you on wild meat?
I mean he may sample a steak or two for himself which is to be expected but he won't short you a box full,...there's plenty other customers that bring in moose and deer to five finger discount some steaks from.
I dare to say a butcher has never bought a pound of meat nor butchered an animal for himself.

I say do it yourself. All you need are great SHARP butcher knives and a case of beer and a pretty gal to assist of course. It's an important part of the hunt if you ask me and makes the feeling of self sufficiency even better.

Let the general public who eat beef and pig eat the other stuff

Tim,
There is a German fellow butcher on a farm half way between Valleyview and DeBolt, but he may be the butcher you spoke of that is full up.
Call Rob B sports for his phone #. He is $1 / lb tho.
