Bacon Wrapped Chicken Cordon Bleu. Smoked on the Louisiana pellet grill with New England Apple pellets for 4 hours at 190 degrees. Then 1 hour at 300 degrees to crisp up the bacon. Sooo good there wasn’t a morsel left on the platter not even a sample left for the dog.

Just a fluke
Having some folks over for a Xmas drink tonight that were downsized from our Eggs Benny Xmas brunch on Saturday.
So, since I have a litre of leftover Hollandaise in the fridge, I decided to place a dollop of chilled hollandaise onto the center of salami slices, fold in half and pinch the ends like a whale fluke.
Kind of like a Eggs Benny Brunch -sort of but Keto
Now stop your whining about the invite
A few test samples-now I know they taste good, I will pipe out the hollandaise to make a platter of pretty ones.

Anybody got any tricks for making lettuce wrap burgers that will hold together for more than two bites?

Thanks, its beer batter with some light spices
Had the pike in garlic/brown sugar brine over night, then rinsed and left in the fridge all day

Hi buddy..try using Kraken rum to flash the prawns...hmmmm. but I was forced to dig into the freezer for some phesant and ruffies to make a pot of slow bird soup...You pull out your grannies Home Made Chicken Soup recipe...replace with a couple of phesants or Ruffies that were too slow to get away...fresh vegies...slow simmer...glass of wine on the side...Big smile on your wifes face...Great way to share an afternoon with your Lady. Ad to hear hou are getting spoiled too.

My son made his own version of fish tacos tonight and I got to be sous chef. Beer battered walleye on red cabbage, topped with his own garlic aioli, and homemade pico de gallo with basil instead of cilantro. All I can say is IT WAS AWESOME!
Kid started working at Local in Sherwood Park before Covid and just started back there last week. Maybe he’s picking up a few things.
