Default "Challenge" from my lovely wife...

As some may know, my hobby for the past few years has been handcrafting hunting knives.

So a couple of months ago, my wife asked me "why don't you get out of your comfort zone...and make a kitchen knife for a change?"

So I thought about it, did a little research, and came up with this, which I finished today:




It is a Japanese Honesuki knife.

The blade is made with 1084 steel (could not find Japanese steel...hehe).

The "Wa" (handle) is round and approximately 7/8" diameter. It is made with Maple and Purpleheart wood, with brass liners and guard.

The "Saya" (sheath), was made by laminating sheaths of Maple/Purpleheart 1/16" pieces of veneer.

All wood surfaces were coated with a tung oil "sealer", and 2 additional coats of actual tung oil.

I don't mind the round handle, but when I make the next one, which I'm sure I will, I will probably put a Western handle on it, just like this one. I think it is a better feel around the hand. Nothing against the "traditional" design.

Nicely done Phil, that looks good, and I expect it will be really handy in the kitchen too. One of you should be handy in the kitchen, Amirite?

they look sharpingly fine lol - I'm really disappointed with my Shuns, keeping an edge and have looked at some of the more recent gun shows for local knife makers. I think a good alternative for commercial made!!!

Nice work Phil. I prefer making full tang knives vs hidden tangs as well

Thanx for the kind words folks.

It was an interesting project, but fun. The pictures don't do this thing any justice, mainly due to my lack of photography skills.

Hey Keg.

After she test drove this thing on tomatoes, hard veggies, and chicken, she made it very clear that this was not going nowhere, and I also got that "stone cold look" from her if I tried to sell it...you guys know what I mean by the "look".

As stated, I will be building one with a Western handle, which I will most likely put on the market. I will keep you in mind...

Great job Phil! I know a guy who is big into this hobby and even Joe Rogan was commenting on his skills ( he sent him one).
After I bought my smoker a few months back I sprung for a Japanese knife from knifeworks. $$$$$ but I am pleased and will take care of it and it gets it use.

A close shave could be really bad - particularly as there are other parts of the body one could choose to shave

after getting a smoker i also got into japanese knives lol

Default Another one...

So I just completed another one.

This one is made out of 1084 Carbon Steel. The blade is 6" long. Keeping with the "Traditional Japanese Way", I made an Octagon handle, using Olive wood and Padauk. The "bolster" is sandwiched between brass plates and black liners.

The sheath is made with maple and walnut 1/16" veneer laminated together.

However, I did a little "Boo Boo"...

This is a hidden tang, and when I epoxied the tang inside the handle, I was off center by about 1/32". The blade was wrapped in tape and I failed to notice it. Live and learn, and double check.

Therefore, not worthy to put this one on the block, as trained eyes will notice it.

Having said that, it no way affects the "utility" of the knife. That thing is razor sharp.

So someone will get a nice gift!...hehe...Ain't gonna be my wife as she got the first one I made...hehe...

I personally held that knife just when it was completed. A thing of beauty. As far as knives go. We’ll done. Order coming soon.
