Default Pork/pork fat

I am looking for some pork and pork fat for sausage. Anyone know where I can get some at reasonable prices? I’ve checked Kijiji and called some butcher shops.

I bought some pork butt from Soby's $1.88 a lb if it's still on sale

Try Country Quality Meats by Gibbons, or Kastellan meats by Ardrossan.

For pork trim, I go to Ben's Meats and Deli on Stony Plain road. Usually the fat/trim is $1 lb if you get a 10 lb bag. Best to call ahead to ensure they have it though.

I use Costco pork butts, they seem to have enough fat for basic sausage.

Most butchers throw away the pork fat, should be cheap 50 cents a pound usually.

Default Pork fat

I buy boxes of bacon ends. Pick out the good stuff. The rest for sausages.

I make Mennonite cracklings (Grieva) from time to time from pork fat when rendering lard. Nothing better on toast! I usually get the fat and skin from Master Meats in Calgary. Hungry now!

I've got 40 lbs that I bought to mix in with our sausage, but the pork loins had more than enough fat on them already.
If you want some or all (2 × 20 lb bags) you can have it for free. I just picked it up today from the butcher's.

If the OP doesn't want it by tomorrow evening and someone else does, just PM me.

Victoria meats and fancy sausage. Tell them it’s for making sausage and they will seek you a deboned front shoulder and pure white back fat.
