Should have a "slip bar", or other form of break away release, so that it can be pulled out backwards in the event that it jams under something. It appears that there is ring on the bottom, so that might be what you are intending to do, if not, look up the design for breakaway anchors. If in heavy current, you will be thankful to pull up and out, rather than cut off.
I figured so much, or I was going to suggest the same. I did a "loop" of 1/2 " square rod, around a drag anchor which was on a hinge. I had a ring on the loop. you could pull backwards as the ring would ride the loop to the rear of the anchor and essentially pull straight out.
Used to fish the Gulf of Mexico around Cedar Key. All coral anchor sets, and man can that be tough if the anchor does not reverse out. You also do a lot of damage to the coral reefs by trying to break out.
Otherwise, wish I had your scrap stainless pile. If that is 316, its worth at least 300.00
