I could introduce you to a butcher who makes a damn fine goose jerky. My wife, who hates the taste of waterfowl, even thoroughly enjoyed his samples.

So far goose jerky is number 1 nomnomnom!! I love it. and the best part is the breast is almost like perfectly made to be made into jerky, the width and thickness perfect jerky slices!
