You're getting the wrong stuff, my bread gets moldy at just about the right timing, I can usually eat the loaf before it turns, but a different (no toast)breakfast one day can be enough for me to miss the last slices before they turn. I've gotten into the habit that near the end of the loaf I'll smell the whole perimeter of each slice before toasting it. Alpine bread from Co-op.

I actually just wanted a (German) documentary about bread. The additives and especially enzymes they add are insane. The bread industry uses about 30-40 different enzymes and mostly to make machine handling possible, cut production times (rise times) and to increase shelf life. They did a test with bread and they ended it after 7 months. I believe they had 5 different brands/breads and only 2 got mouldy eventually.

They also talked to a specialist for allergies and they test these enzymes on people. Out of 3 people 2 get sick by being exposed to the enzymes.

They concluded that humans eat bread for 1000s of years but recent health problems and allergies/intolerances have hardly every anything to do with gluten or wheat etc. itself. It all comes from the additives.

I like to as well. However not a big bread guy and being single it gets mouldy too fast. Waste over half of it. Not a fan of freezing it either.

I'm in the same boat, but the ladies at the bakery will break down the buns into half dozen and I have the bread sliced "thick" to avoid much waste.

We need to get you guys on Sourdough. Like the real sourdough not fake store sourdough. Loaves are fine 7 days for sure. I made a 100% rye loaf on New Year's day. I ate the last slice on Jan 11th

Off topic but I do not remember the last time I ate at a fast food place. Not knowing what kind of meat, or even if it is meat keeps me from wanting to go back.
