Many times they don't, we usually have the family together and everyone takes turn fanning around the meat to keep the flies away, making dry meat can be very labor intensive, we also flip the meat so its being smoked evenly on both sides. Never made it with deer meat but we made some with elk last fall, turned out really well. Have to be careful with the type of wood you use as well. I bought oak firewood for my wood stove a couple of winters ago but I didn't like the way it burns but that oak is super awesome for this purpose, used it when we went out camping, it makes for great cooking as it burns slow and creates the best coal bed.
The best way to store dry meat is in a clean white cotton pillow case or brown paper bags, both help draw moisture away from the meat. Ours doesn't last very long as everyone wants to eat it right away but I've kept it through the whole winter in a dark cupboard.
