Bighorn sheep and RM Goat meat
As a beginning hunter, I have always wondered about the meat from the Rocky Mountain Bighorn Sheep and Mountain Goat. Have any of you eaten these meats, and how do they taste?

I haven't had big horn, but I have had dall sheep and it was good. I've heard big horn is the best tasting wild game there is. Goat on the other hand tastes a lot like worn out hunting boots. Very tough, the goat that I shot didn't taste bad, but it was tough and very bland. But he was 11 years old.

I've had some really good bighorn meat and I've had some not so good bighorn meat. I'd have to say it is pretty nasty during the rut. Now a bighorn ewe on the other hand is about as fine of meat as you will ever taste. I've eaten goat meat several times and quite like it but it can be chewy.

All the bighorn I've had-(never one from the rut) has been excellant. Never had goat.

My bighorn was the tastiest ( if thats even a word) meat i ever had, that bieng said it was a 4/5 curl shot the 3rd week of sept.I have heard it is the worst thing you can put in your mouth if killed during the rut.

gotta agree with SH , ewe meat unbelievabally good , by far some of the best tasting wildgame I ve had . however I also think alot has to do with preperation and cooking of the meat .. Im hopin to try Ram meat this fall

The meat from my ram was pretty nasty! Smelt and taste what I would expect rock to taste like. I shot my ram the first hunt in nov.

Never had Big Horn but lots of Dall. It is my favorite meat in the world (AB beef included)
My Wife had never had wild game before she met me. She likes it now.
She was definately not looking forward to sheep meat. The first time she tried it her response after the meal was, "You gotta do that every year!!"
However, she is not very understanding when I come home empty handed and a camera full of pics of rams I passed on
Thankfully this year I found one and a mt. bou to boot!!!!!

From my experience, bighorn rams don't come close in taste to thinhorn rams. I've never tasted a bad stone or dall. Can't say the same for bighorn. I'd agree TM, Dall/Stone ram is as good as it gets.

I shot a 12 year old goat in 1990.
It took 1 1/2 days to pack the meat, cape and head out.
I was cutting chunks off the tenderloins and roasting them that evening. I would chew until my jaw ached, spit it out and roast another chunk. Never did manage to swallow any.
My bighorns have also been pretty marginal tablefare.
if you want meat get ewe tags or cow elk.

Bighorn Ewe, it doesn't get any better for taste and texture. Plus you generally worked a bit for the food, which somehow makes it taste even better.

Mountain Oysters!
Yep go ahead and try them. The oysters of the big rams are the most tender and best tasting. With a bit of garlic and butter you would swear its lobster! A lot of you are probably gagging now but it's the first thing we eat when the horns hit the ground! You wont regret trying them.

Had some white tail pepporni once and it was the best I ever had. Thats all the wild game I have ever ate... Any thoughts of what is the best game for eating?
That pepperoni was so good I went and got my pal and hunting course done this year and am ready to go for the fall!

Bighorn is a favorite of mine. Mountain goat is also very good, great flavour, some parts are a little tough, but I really enjoy it.

Hands down, every thinhorn ive eaten have been exelent, or maybe im just that hungry when i eat it. Honestly, as far as texture, tenderness, and taste go thin is the best. The couple big horn ive tasted were a little rougher but not bad.

If you know the ram or goat you just shot is going to be really tough to eat, texture wise, will turning it all into sausage, pepperoni, etc, negate that?

Sheep and Goat meat
Sheep meat is nectar of the gods but Goat!!!!!!
I won the AB competition for goat back in 1976. We packed this goat meat
12 miles on ourbacks. When we tried it............I couldn`t even stand the smell of it cooking. The dog wouldn`t even eat it!

BC goat I got was one of the best critters I ever ate. Ab. ewe was one of the worst, Ab Bighorn was not great, 30+ Dall's....never had a bad one!!
