Butchered a couple whitetails for some Buddies day before yest, and they graciously gifted me a couple tenderloins. So, last night was their moment...
Spiced and slathered with butter / lemon / garlic sauce, then on the BarBee:
Interesting shot. Almost makes it look like the Tenderloins are on some sort of Alter:
Cooked to slightly less than medium rare before pulling them:
Slathered with Chanterelles, shaved garlic & onions.
Accompanied by long grain & wild rice with more Chanterelles & chopped green onion:
Then served up with Caesar salad and a fine Merlot.
Marvelous!!

Took the front shoulder off a WT doe and put er whole into the roaster. First I rubbed with olive oil, then generous salt and pepper. 30 minutes at 450f to sear the meat. Then simply diced tomatoes, onion soup mix, and can of beer. Cover and cooked for 6 hrs at 350. Meat fell off bone, and I mixed it with the sauce in roaster. Delicious. Give a venison front shoulder a try with a long, moist roast. Too good to go into sausage trim.

Nope. Taken a considerable pile of Rocky Mountain elk, but never chawed down on a Rosie.

Inside round steaks on the grill:
Went with a subtle sauce of butter, garlic and a hint of lemon so as not to interfere with the elk's flavor:
BarBee'd to just shy of medium rare, then served up with Chanterelle shrooms, onions, shaved garlic, wild rice and fresh beets from the garden:
Paired with a fine Shiraz, it was a meal fit for Royalty!
The elk was very tender, and had a most excellent flavor.
Makes me desperately hope one day I'll draw a tag for on here on The Rock!

These days every meal starts (and sometimes ends) with South African biltong. Find a good recipe and give it a shot - super easy, and it’s hella good! This is cow elk from this past September.

We were in Curaçao in ‘18 and they would have Olliebollen booths set up at the night market down by the waterfront. 1st time we had them and they were delicious! I asked the wife to marry me on that trip. We tried to get Olliebollen as part of our midnight lunch at our wedding last year but it was a no good.

Buy Low has Alberta Prime Rib on sale right now.
Eight HUGE 1.5" steaks (once home & cut) for less than 70 clams works for me!
First one was up last night...

Given the madhouse / whirlwind of cooking that is about to be conducted for The Season, we decided to keep it somewhat simple last night.
Teriyaki Tuna
Into bag with the glaze for a couple hours:
Basmati into rice cooker, The Missuz on the Caesar salad, cheesy garlic toast in the hot box, then drop the tuna steaks on the grill (fast sear both sides is all that is required, you want the inside just warm, not cooked):
On the plate hot with the rice, you can see how the teriyaki caramelized:
Then the setting for two:
Relatively quick & simple, but Oh So YUMMY!

Christmas Dinner:
One fresh farm raised duck, stuffed & prepped for the hotbox:
Three hours later (note: stock photo - forgot to take one at this point):
The skin was very crisp (delicious!) and the meat tender, moist and flavorful!
Side dish - a new-to-us recipe with Brussels, Butternut, Pecans, Cranberries & Spices:
This turned out Awesome, and we will be doing again!

Been a tad busy with the smoking processes to post on this one, but rest assured, our Buddha Bellies are being well looked after!
Last night was our version of Surf & Turf. Bacon Wraps (Whitetail) & Prawns on the Barbee, Garlic Pasta with shredded 4 cheese on top, an excellent Salsa stye Salad, and a very fine Red:
None to Shabby if I do say so myself!

Oysters on the half shell and sauteed prawns getting ready for the show:
Smoked Oysters on the BarBee:
Quick flash for the prawns:
Served up with four cheese risotto, fresh sourdough bread and a fine red:
The sourdough is excellent for mopping up all those wonderful juices!
Looks like it was a Hit!
