Default Your Best Broccoli Recipe Wanted

Friends wife is a rather persistent and somewhat annoying vegan who constantly tries to lecture me on the evils of meat.

So as a lark as long as the only dishes on the menu were broccoli based I agreed to attend a potluck dinner at their house tomorrow.

Now I need a fantastic Vegan Broccoli recipe

Vegan side dishes aren't always so bad, as long as the main is meat.

Broccoli soup is easy. Medley of roasted veggies, it's the only way I can eat asparagus.

Be sure to bring a side dish of the movie "sausage party"

Mrs. Big Bull made a broccoli salad from the Whitewater Cooks cookbook last week for Easter dinner, and I was impressed. This appears to be the same recipe:

I like them cocked this way: olive oil, salt and pepper, coat them with an oil and add salt and pepper, then put them on a flat baking sheet in the oven - 400 F for about 10 min. They become crispy, cranchy and a bit sweet. Taste delicious!

Vegan... as in no dairy... well there goes most of my recipes I have yet to find a decent cheese substitute. The soy cheeses that I have seen still have milk proteins in them, so a no go for the vegans.

How about roasted broccoli and walnuts

I like to steam broccoli, it softens it up and then it goes down the disposal easier......

^^^^^This is the way I like most veggies cooked. They are best hot out of the oven so you might need to arrange oven time at the right time.

BTW I usually can not stand Brussels sprouts and asparagus, but oiled and salt and pepper broiled, delicious. Cut the Brussels in half.

Remove broccoli from fridge, walk to chicken pen, toss into chicken pen. Wait for egg to be layed, remove chickens head place in pot, roast at 350F. The perfect head of broccoli.

The wife's go to also has cheese. Sorry.

LOL, I do cook Brussel sprouts the same way! Since I found this recipe, all our friends are also following it and loving it.

Take a dozen broccoli stalks still growing in dirt to the event. Like a little forest in a dirt tray. Let the guests just break off the little florets and eat them raw, no dip. True vegans should love the raw freshness. Explain that you didn't want to bring a bunch of chopped up dead vegetables.

i fully enjoy steamed broccoli with cheez whiz. in about three hours...
i do like the sound of kjb 's recipe about baking them into crunchies.

Some vegans make freak out that you contaminated it with butter. Margarine is out because it is trans toxic. Might have to use coconut oil.

I stir fry with moose or elk.. They are vegans.. Actually I had a vegetarian lasagna one time at the wife's friends place was pretty good.. Had like an alfredeo (how ever you spell it) sauce.. Giver a google might find something.. Stop for a hot dog first before dinner. Don't want to shock the colon

But there are some 'good' vegans out there. My daughter brought a friend around for dinner one time, she said he was vegan and hoped it wouldn't be a problem. I said, as long as he wasn't a high maintenance vegan (the type who insist you have separate cutlery and cookware for you vegan and non-vegan food) it would be OK. She insisted he wasn't that type. As it turned out, I was making a bean and tomato side dish that he was happy was something he could eat and I didn't have to go out of my way to make. The best part was when he when he was looking at the shopping list stuck to the fridge... it had been awhile since we had gotten any beef and I just wanted a reminder to look at what was on sale so I wrote "lump o' meat" on the list, he thought it was hilarious!

My ex's daughter had a vegan friend, and she decided to jump on the wagon too, just determined to be a vegan. She invited her friend over one evening for supper, so I bought some vegan crap for them to eat. And decided to cook her favorite meal, jiggs dinner with a side of roast beef and gravy. If looks could kill, I'd be dead right now. poor kid, salt beef is her favorite but she didn't give in.

Thanks for all the replies. Gonna make the Broccoli Salad and screw them if they don't eat it because of the dairy and cheese.

Also made a Smoked Roasted Curried Cauliflower Flatbread for my second dinner of Smoked Turkey when I get home from Vegan Hell that is roasting at the moment

I've done that, too. Add some garlic, hot pepper flakes and lemon zest. Parmesan petals on top... yummy!

Haha!! I would look at their shoes when they come in... chances are they are leather. If so, no broccoli for them!
