I did this this fall with a havalon and two blades. It isn’t the first time either.
Tough to beat a Havalon for gutless, deboning in the field. I carry one, don't recall the model but it has 2 blades, one small one large. Not the best if you want to keep the hide I find.
I've had good luck with Knives of Alaska, specifically the Elk Hunter with the SureGrip. The blade seems to hold an edge longer than anything else I've used (more than enough for skinning a deer or bear) and the handle comes in blaze orange which I like so I don't set it down and leave it in the woods lol I am sure there are quite a few options that will work in your price range though

About twelve years ago I bought one of Nathans knives for pig hunting over here. My god it took a wicked edge in A2 steel. It would go through an old boar like butter.

I'm not really a licensed bodyman or heavy duty mechanic. I just play one at work.
Well it finally got over here about four days after my last hunting trip for the winter. It’s warmed up enough now I don’t think I’ll hunt until it cools off. That means the Sponaugle will have to wait until the deer start to rut in April.
James does very nice work. Not perfect but close and especially for the price point.
I used the dozier all year and as per usual it performed admirably.
The boys also put the little Lionsteel to work and it performed very well considering what it is.
That benchmade I mentioned a few years ago had cut an awful lot of meat in the last two years and it’s earned its keep as well. It does all the work against the bone and hasn’t rolled an edge or micro chipped at all.
It is a crappy day here in Calgary this morning. So I was reading Coiloil's last entry and it made me wonder how far this thread has come since 2021 and hardly a stern word spoken.....It is still chugging along.
From page one/entry one, a wide variety of interest and some great sources of information shared....And some great talent surfacing.
For me I have learned a lot....
