Default Muddy taste killers

Until this year I was always lucky enough not to catch fish that tasted muddy....
Any ideas on how to get rid of the taste? I have searched the internet and there are all sorts of theories - take too long filleting it and it will taste muddy... Less info on how to still eat the fish. Ideas?

The only thing I have found is smoking it, or keep them small.

If your going to batter the fish soaking it in buttermilk overnight seems to help.
