Default Meat grade marking

I have noticed Co-op no longer puts the grade of meat on their labels. Was at Costco yesterday and their meat no longer carries the grade on their stickers either, I was looking at the primal strip loin. Anyone know why they stopped doing this?

As far as I can see, there is no specific law for grading meat if it does not get exported or moved interprovincial. So, I'm speculating, based on what I read, that if the beef originates here in Alberta, and is processed and subsequently sold here, there is no requirement to grade the meat.

But if you sell AAA would you not want your customers to know? I bought some rib roasts to cut into steaks from co op in the spring, wasn't marked and all the roasts looked pretty lean. I asked the butcher and he assured me they were AA which I like for that cut. They were the worst rib steaks I have ever had.

Usually Costco is aaa , Safeway/iga/sober is selling aa. Superstore it aa/aaa .

Speaking of aaa Costco having $40 off on aaa whole strip loin .

Yeah just bought one this afternoon. Did find the AAA mark, they moved it from the price label to a sticker at the bottom of the packaging. With them stacked the way they were it was not visible. Busy day for use, ground up a brisket and eye of round for ground and then cut and wrapped the strip loin. Hamburger was a little high in fat, next time two eye of rounds to a brisket.

Piker; have you ever tried to leave the Strip Loin in cryovac n frig for a period of time?

No I have not, have you done it? For how long? We split a 16 oz tonight, was very good. Joys of getting older, doesn't take much to fill you up.

Is it ok to leave it for that long ? I pick up 3 I just freeze 2 whole and cut up the one into 3/4-1in steaks turn out to be around 6$ a steak I got about 23 nice steaks and the 2 end piece I cut up into stir-fry . I find that the quality is the same even after freezing the whole one for a couple of months and taken it out and leave in fridge to thawed 24+ hour .

Yes I am grinding myself. A whole brisket and a whole eye of round yields in the 65% lean range I would guess. If I through in 2 eye of rounds to a brisket I'm guessing now, about 75% lean range? AAA brisket have a lot of fat, a lot.
