Default Easy Bread Recipe

If you have a stand mixer this method is foolproof to make 2 loaves of white bread:

To stand mixer bowl add:
3 cups warm water (100-110 F.)
2Tbsp. sugar
Stir to combine
Sprinkle on 2Tbsp Traditional yeast
Let yeast bloom for 10 minutes
Add:
2 Tbsp canola oil
3 cups all purpose flour
Mix with paddle on low speed until smooth
Add 1 1/2 tsp salt
Stir to combine
Replace paddle with dough hook
and add 3-4 more cups flour 1/2 cup
at a time, mixing on low speed until dough begins to
not stick to bottom of bowl.
It's important to stop adding flour at
this point. 6 1/2 cups in total is generally enough,
but up to 7 may be required.
The dough should still be sticky but manageable with your hands. Sticky dough makes light bread.
Lightly flour countertop and turn dough
out onto surface.
Now knead dough, lifting and folding,
pressing and turning for 5 minutes.
If dough is sticking to your hands or
the countertop, add flour gradually from
whats on the countertop, or add more.
Lightly coat the inside of a glass or
ceramic bowl with cooking spray.
Form your dough into a uniform ball
and place in bowl. Turn ball over to
insure oil will coat all sides.
cover bowl with plastic wrap and
place on center rack of oven.
Place a bowl or deep dish of
boiling water on lower rack and
close oven door.
Let dough rise for 1 hour.
Dough should now be doubled in size.
Punch dough down to remove air bubbles.
Lightly flour countertop and turn bowl
of dough upside down on surface.
Let rest 10 minutes.
Divide dough into 2 equal pieces.
Press each piece into rough 8X10 inch
rectangles.
Start at a long side of each rectangle, tightly
roll each into a log that will fit in a
loafpan.
Coat 2 loafpans with cooking spray.
Pinch seams and ends of rolls of dough.
Lift and slam rolls on countertop to
remove any remaining air bubbles.
Place each roll in oiled pans and
place in oven as before, with hot water
in dish below.
Let rise 1 hour.
Remove risen dough and water dish from
oven and set oven to 350 F.
When oven is hot, return loaves to center
rack and bake for 30 minutes.
When done turn loaves out on their
sides to cool on wire rack.

I should add that if your dough seems too sticky, you can always add a little more flour at any point. The trick is knowing when to stop.

I've been using close to the same recipe for our daily bread for years always comes out perfect, I use bread flour gives a better texture.

Or add about a teaspoon of vital gluten to each cup of all purpose flour used, it essentially turns AP flour into bread flour (high protein).

I just throw the ingredients into my bread making machine and come back hours later for perfect bread...no fuss and muss!

Gonna give this one a go over the weekend. For some reason I just can't get my ass to bake anything. Doesn't matter if it's simple or not, I seem to avoid it like the plague.
