Default Testing bear meat for trichinellosis

Hi guys
Is anyone would know place that I can send or bring a piece of my black bear meat to get tested for trichinellosis?

The trichinella parasite causes trichinosis, but I get what you meant.

I don't know where to send meat for this - if you know somebody in biological sciences at a university they could probably throw it under a mircoscope and tell you.

That said, the odds are it has it - virtually 100% of bears carry this parasite. This doesn't mean anything. If you cook bear meat properly there is zero risk of transmission.

Like the other guys said, cook it well. No need to test, 99% will come back positive so don't eat it medium rare. Bear is best pressure cooked, crock potted, made into stew etc. As long as you get a complete cook through there is zero risk.

Default trichinosis

Agree with other posts. Internal temp of 165F for minimum 15 seconds kills it.

Good post. That is an excellent article on the topic. Still not eating any Bear medium rare though.

I had planned to keep meat this time around if my spring bear hunt ends up being successful.

This parasite factor has always (and still does) turn me off a bit....

I will re-read the article above and try to find peace in knowing I always cook my meat well, aside from the flexibility we all enjoy with steak.

Yep! I agree. Not that fond of pork for the same reason though I do like bacon. In general though I much prefer my meat from avowed vegetarians.

One of the top three meats on the planet in my opinion.

Grilled, smoked or sausaged

Meat thermo is your friend and dont look back.

As stated 165f all the way through and enjoy.

Loin steaks seasoned with salt, pepper, brown sugar and pineapple slices on top sitting in the smoker at 225 until cooked to 165 internal is glorious.
