Best Filleting Knife I have ever had.

7 inch blade for the big fillets...lol

Beautiful workmanship, he makes them from scratch, does all the engraving himself.

Henckels is a great choice.
I don't keep a lot of fish, so the Rapala knives are good enough for me. I've got 4, but I couldn't tell you which specific ones they are...I'll check later.

The funny thing is, out of all of them, when other people use my knives, the cheapest out of the bunch is usually the one they like

I went and checked out the Havalon knives based on the feedback here. I ended up buying one. I love the idea of being able to change the blade. I am never happy with the edge I get when I try to resharpen my other fillet knives.

I was having this discussion this week with a co-worker and his wife is a fish monger ..... she uses a swibo wenger and say that's the knife they use for high volume, precision cutting and continuous use ...... they have tried many many other brands and this one is the common knife down there I guess.
