Default Low and Slow birds?

Hey has anyone ever done a turkey low and slow?
How has it turned out?

I am contemplating this and wonder what you guys have experienced.....

Thoughts?

I did one for thanksgiving. It spent a couple hours in the smoker, and then my wife finished the bird over the course of about 8 hrs in the oven. It was excellent. Hard to carve as it simply fell apart.
Ours was a farm raised bird, if that makes a difference.

You don't really want an overdone bird. The white meat will turn chalky. You need to keep it really moist and even then you wont see much of a difference in tenderness.
Legs and wings on a free range turkey might see a benefit to low and slow but not a standard butterball as they are tender as is.

My wife does her turkey's low and slow, puts a few inches of water in the pan as well and they always turn out awesome.

brine the turkey first it will be the best turkey ever nice and moist
