I like coating my fillets in Aunt Jamima pancake flour and some added spices, then fry or deep fry. Those fillets don't look boneless. Are they? MMMMMMMMMM good! Looks yummie.

i harvested a rainbow trout at bellis lake this winter that had tiny black spots that looked like pepper when i filleted it. took it to fish and game office and the biologist told me it was a parasite (name too complicated to remember) but was still safe for human consumption.
this pic. might have been taken after pepper was sprinkled on in prep. for cooking. looks tasty.

Walleye is the best
I have a couple cabins on a remote Walleye/Pike lake. The only way in is Fly or ATV (16km one way). Love that place, and very few people go there (It's a bit of a challenge, lol)

I like them dipped in egg, then rolled in Cornflake crumbs with a little spice. Fried untill golden brown in a bit of oil. Yummy.

Freakin awesome!! I've done the same thing you have but actually took a rolling pin to a cereal pack of Corn Flakes. You gotta try it some time. Even better than the corn flake crumbs you can buy. A 2nd best, same recipe but use crushed rice krispies and pike.....amazing!

I have cooked walleye about 25 different ways including sashimi, Thai mandarin & lime and baked in filo pastry. My personal favorite is very simple. Take a bag of salt and vinegar chips. Remove about half of the chips (store in mouth/belly if necessary), crush the chips and drop in your fillets. Shake and let sit for 5 minutes in the chip bag. Fry in a hot cast iron without butter. There is more than enough oil in the chips to keep the fillets from sticking. Trust me guys. . .this is very good. I have tried a variety of chips and salt & vinegar seems the best to me. Now cook some bacon in the pan just before and remove most of the grease before the S&V fillets go in (or leave all of the grease and sprikle the fillets with TUMS). . .

Cheers.

ps. . .Rock Doctor - that place looks like heaven. I regularly visit a couple of quad in lakes, albeit not 16 km in. Nothing like having a lake to yourself.

Limited out on walleye a couple times this past couple weeks back in Saskatchewan. Man I wish there was a good lake to go fishing for walleye around Edmonton.

Not meaning to start an argument here, i stock pile cheeks when i go back to Manitoba as well. But, would that count as over your possession limit? and they cannot be easily identified? so i guess you could get charged for being over limit?

Ps, wanna give me some
