Have a look at one of these. For $80.00 you will get a knife and 50-100 replacement blades. I have one and they are literally like a scalpel. Crazy, crazy sharp when they are new !!!!

The outdoor edge swing blade. Holds a nice edge and the 2 in one feature is nice.

X 2 on the Havalon. Just bought one with 100 replacement blades, got to try it out yesterday for the first time on my son's deer. Will never go back, luv this little knife. Took me two blades to skin and second blade still sharp.

So for $80 covers cost of knife and 100 blades

Just my view here but a scary sharp blade on coyotes will make for lots of cuts in the hide if you are new to skinning coyotes. Pelts are thin and will not take a swipe with a razor sharp scalpel. I used just a basic schrade pelting knife when I was learning to skin coyotes and only now will I use scalpels. Even now I slow down and have lit up my skinning room as much as possible to prevent unwanted cuts in the pelt.

Yep what he said.

I have a small Muela with rosewood scales and a small gut hook. I like the gut hook for splitting tails. I got mine at Wholesale. Don't know if they still carry them.

Default Skinning Knife

One of the best coyote skinning knives that I found was a plastic handled Henckels for under $10. Held a decent edge and was quick to touch up when you needed a sharper edge .

Ive always used an outdoor edge caping knife. Gets dull quickly but also sharpens up really well and really fast. I always have a 'crox sticks' sharpener set up and sharpen as I go.
I think I paid 32 bucks for the knife and it's skinned a ton of coyotes.
