Default Eating Spring Bruins

Hey guys, I have never taken a spring bear, only fall bears. What is the meat on a spring bear like? I know that in the fall it was good eating, but what does everybody normally do in the spring? Do you keep the meat?

I like the spring bears because there's not so much fat to deal with. I've found no difference in the meat spring or fall.
