Pork steak, lots of smoke on the bbq, green and yellow suchs, green paste tomato green cherry tomatos white and rainbow swissh chard green onion couple radishes, rice. all but the pig and rice from one of my gardens

Spent yesterday out in the 30 degree heatwave, painting the huge fence that runs around our place. Was sunburned and in a bit of a chitty mood when She Who Rules said: What's for Din-Din. Ignored my initial internal response which would have gone like: "Whatever the hell your making"... LOL Self preservation mode kicked in thankfully!

Did not want much due to heatstroke, and sure as hell id not want to heat up the house by cooking much either. A little rummaging, found a bag of prawns, a vac sealed bag of Dungeness crab, an avo, some shrooms, few cherry tomatoes, onions and salad greens from the yard. Good to go.
Light, refreshing & Yummy!

Yes -I likely would lose the asparagus-lay Roasted Veg-Beets and Carrots and Parnsips on the Roulades with the Stilton and tuck into a Yorkshire pudding after grilling and top with a dollop of rich Stilton demi

Default Smoked Trout

Here is a couple trout I dry- brined for 10 hours in 3 cups brown sugar 2/3 cup kosher salt, zest from three lemons, fresh garden dill. Smoked for four hours. Tastes good to me. I was surprised how nice and oily the trout are.

They will be an appetizer (Along with some 30 year old rum) for my upcoming Birthday dinner, consisting of 35 day dry aged boneless ribeye, bolete mushrooms, ceasar salad, new garden potatoes and new garden carrots.

Finished off with Angel Food Cake slathered with wild strawberries. Then more rum.

My wife recently found out gluten and dairy do not agree with her at all. Challenge....accepted! Looks like a lot of Asian and SE Asian dishes in our future. This is grilled veggies with traditional yakitori. Who knew gluten free soy sauce ain't half bad?

Future Dinner File...

Day before yest a good Buddy wandered by and dropped off a couple large whole pork hinds for us. As we have now consumed the last Bear and Russian boar hams, I knew exactly where these were headed!

Skin:





And slice into appropriate ham sized chunks - seven a hind that is:



Used to always do my own until one time I took some bear hams into Pete's Mountain Meats. Pete did such a fantastic job with them (could not tell the difference from pork!) I now take all of our hams to him for brining and smoking. These should be ready upon my return from the offshore...

35 day dry aged ribeye, fresh new garden potatoes, carrots, ceasar salad and store bought corn on the cob. Washed down with a home made bottle of Shiraz.

For dessert, Angel Food Cake, whipped cream and wild strawberries.

Maybe ol Pete is pulling a sneaky Pete and keeping the bear for himself and sending you home with his pork! Haha just kidding as I do not know the guy and have no reason to think he would actually do such a thing.

Black Berries are starting up fine here...
Picked this Big Bowl day before yest, and let it sit in the cold room overnight:



Set up the canning process for jam the next morning.
Thankfully in the shade so as to miss out on some of that oh-so-wonderful heat of late!



And Away We Go...



Took a spell, but that first harvest gave us no less than 17 pints!



Heck of a good start!
