I cook deer steaks on low heat. Cook until the blood starts coming out on the top side. Flip steak until blood starts coming out top side. Quick flip to get rid of blood and they are done.

I was surprised no one brought up steak in this thread until now... Those sirloins look awesome, and are one of the easiest muscle groups to identify - the teardrop looking roasts are the sirloins. One of my favourite cuts. I think they make every bit as good steak as a back strap.

I usually marinate mine overnight, but have done it without and enjoyed it, too.
I grill on med heat, around 350, for 4 minutes a side. Nice and rare.

An overdone deer steak is a horrible waste! (Unless you like it that way, I guess.)

They other good thing I learned was to butterfly cut the tenderloins and grill them, too. You cut a 2-3 inch thick chunk, then cut *almost* all the way through in the middle. Then you fold the sides out away from each other, and set them flat on the grill. Even with little deer tenderloins, doing it like that makes a pretty good size steak. Or just cut them into slices and have a bunch of mini steaks.

One article I read iirc was out of outdoor canada. Basically with cooking wild steak is cook it was rare as you are willing to eat. Wild game is a very flavorful meat expescially when next to store bought beef. Over cooked game meat loses quite a bit of taste and toughens up. Besides you want steak juices left over so you can soak it up with the garlic toast
