No fat so you must roast them 1/3 less time than a store bought. The legs are muscle and tendons so I put them on the BBQ and the dog chewed on them for days.
Rather bland tasting but when you take it out of the fridge and make a sandwhich you cannot tell the diff between wild and store bought. If you have one deep fried is really good
