I've fished quite a bit in PV and wouldn't really recommend fishing at Christmas time. The water is too cold for sail fish or Marlin. At best you might get some Jack Cravels.

Been there 3 times, not at Christmas but always the first week of Jan. Fishing off Punta Mita has always proven to be productive. Fished each year and caught roosterfish, jacks, spanish mackeral, pargo and a couple dorado. Went out to Corbetenia once and was a waste of the first half day for fishing but saw lots of whales. Go down to the marina in the late afternoon and you'll see what the boats are bringing in and you can talk to the guys down there.

brought my own and also used the guides rig. if you want to go on the cheap; sit through a 2.5 hr time share schpeel and get a free breakfast and free fishing. thats what i did one of the times i went fishing in PVR. went at the same time as you and caught many crevalle; really fun to cast to the schools in the shallows by the river mouths.
cheers and have fun

2006 we landed a 800+ lb blue marlin at Christmas on the first of two days out. The second day was a 3 120+ sailfish day with some durados. If I remember right, we were out with PV Sport fishing.

I fished there with my son and one of his friends. We found a guide on trip advisor. We caught 26 tuna (albacore) and one dorado in the morning. the boys were exhausted from bringing in fish by that time so we went snorkeling for the afternoon. The cost was $320 for the boat for the day. It left from the marina by the vetran's hospital.
