Cats, heck, I think every wasp, hornet and from miles away would set up shop. Having been around Canada Packers in Steveston as a kid, can attest that cats weren’t a problem, flying things were. Interesting idea, though.

Salmon as well
Been doing that for years on my salmon fishing trips. Cleans a spring salmon just like in the YouTube video. Move quickly over the fish and don't dwell in one spot.
I have a small electric B&D unit that I think I paid $89 for. Easy to just plug it in and hook up a garden hose, it is also a lot lower PSI unit then my gasoline version I use for vehicles.

saw another video on YT the guy took one of the mixing rods off a hand mixer and stuck it in a cordless drill. worked great taking the scales off
