Default Inflatable boats

Hey Everyone, looking for some information on the inflatable boats. I currently have a very small Zodiac, but it is simple tender. It is ok for screwing around on the water and some spin casting. Looking a the Stryker boats, specifically the pro 380 and 420, but would consider larger. I plan to max out the HP on whatever boat I get.

I would prefer a standard boat, but I travel with a bumper pull trailer and need something I can put in the back of the truck.

The intentions for the boat are to go fishing. I live not far from Ghost and enjoy fishing there, shouldn't be an issue. I would like to use the boat on the ocean for salmon, is this possible? How big of water can you use these boats in? Will a big hali dunk the boat on a dive? I wouldn't think I could go far off shore. What happens if you get caught in some nasty chop? I've never use an inflatable on the ocean.

Side note, I've been fishing on the ocean for 20+ years in full size boats, speed boats and tillers. I'm good with whatever I'm fishing in, the concern is the boat.
