Pickerel Cheek Jambalaya with Home smoked Andouille and Cajun Tasso, chicken and prawns in the Pit Boss for extra smoke flavour. Cheddar Bay Biscuits on the pellet grill as well.
Grilled Pineapple for dessert

Set Flame broil on High.
Splash of olive oil in the enamelled casserole and saute Peppers, Onions, Celery and Garlic. Few minutes later add Chicken and Sausage/Tasso.
Add 28oz can diced Tomatoes-4 cups Chicken/Shrimp shell stock. 1 tsp Thyme/ I tblsp Whosyoursistersauce, 1Tblsp Old Bay and 1 1/4 cups brown rice. Close flame broiler and let come to a simmer at 300F closed lid
Will add sliced Okra 1/2 hour from service and 5 minutes before service will add Pickerel Cheeks and Prawns

BBQ beef ribs, bbq pork ribs, foil-wrapped potatoes, corn salad and a broccoli salad. First pick is shortly after the pork ribs had been added to the egg. Only have a finished picture of the beef ribs though.

Omega how do you like the PIT BOSS? I just got the exact same model from a friend who won one and didn't want it. I do all my cooking on a PRIMO OVAL XL ceramic, and thought a pellet grill would be fun to try. Been to busy though and haven't had a chance to try it yet.

It was won in a grocery display. I also thought it would be fun to try.

Certainly could use some improvements before I could ever recommend it.

Temp control knobs do not go up in uniform increments. Some settings the minimum increase is 25 degrees F and the next setting is a minimum increase of 50F. WHY????????? I want more control-not less

Temperature swings are wild and uncontrollable. Temp probe was to be wiped off before and after every cook or temp swings are even worse. Heat is very uneven from left to right because the flame broiler acts as the grease dome and is highest above the fire bowl.
Hopper is small and poorly designed and often runs out of pellets when below 40% full.
Mine is 3 weeks old and starting to rust as the smallest bit of rain finds its way inside. A cover is a absolute necessity, but I have not found one locally yet.
Temp gauge on dome lid fogged up first use and basically unreadable.

Cleaning ash is a big pain. Rack clearance is poor and so you need to Tetris your way in.

Other than that I love it and was happy to have won it Close to it's starter model, I see that it was cost engineered. I hope that the bigger units have resolved some of these issues.

Have not used the smoke setting yet other than for start-up, but will be making some back bacon tomorrow from on sale Pork Tenderloins and will get a better sense of whether I need to fire up the Bradley for low temp smoking sessions
Bottle opener is poorly designed.
My neighbors hate the intense smudge on start up. Ridiculous amounts if smoke settle in for about a 1/4 acre area

Default Beer can chicken

Beer can chicken! I only have a small balcony sized BBQ so I had to improvise a bit but it will work.

Best part of beer can chicken is the instructions tell you to drink beer!

Best free Pellet Grill I have ever owned
My first pellet grill and I am sure I can get much more critical once I have a few hundred cooks on it. Perhaps other grills would raise my ire even more. I do not know.Always a work around to achieve the results I require

Still fun and tasty

My neighbors hate the smoke drift so I may have to put it away until winter

Crispy skin Duck breasts done in a cast iron pan and finished in the oven. Seared Duck Foie Gras with a port/sour cherry reduction sauce over a bed of wilted spinach. Steamed small netta gems with butter. I can die now.

I just ordered a Margarita pizza from busy Italian restaurant on 1st Ave here in New York city called Lil Frankies.
A hole in the wall. Pretty popular and busy.

Supper tonite in NYC we will be going to "Gray's Papaya" which a famous hot dog joint. Many a celebrity have eaten there. It was the late Anthony Bourdain's show The Layover that introduced me to this place.



For a mid afternoon snack I had a delicious Nathan's hot dog, w relish and mustard...Yum!!!

One subway and 20 minute walk from Grand Central Park. I ordered the Recession Special. 2 all beef Franks and a drink. Buddy misunderstood me and i got 4 hotdogs and 2 drinks lol. Its all good i shared.





The papaya beverage was amazing along with the dog. Absolutely delicious and worth the walk.
......Coney Island tomorrow where of course they serve Coney Island Dog’s 😉
